Hello friends!
After three weeks of nonstop travel, moving, and many meals out, tonight I wanted nothing more than my favorite quick, healthy, comforting solo dinner.
Behold:

Mmmm… sweet potato topped with baked beans and a generous sprinkle of cumin — how I missed this. The star:

This time I wasn’t eating alone — Matt was here too. He said it sounded odd, but agreed to try it.

The verdict: “Unique… yet satisfying!” Success. I hope he’s ready for more of my unconventional meals now that we live together.
On the side we had raw sugar snap peas — love the crunch.

For dessert, juicy grapes:

Yum. Best dinner ever. After weeks of indulgence, there’s something wonderful about returning to a favorite, healthy comfort meal.

On another note, orientation at UNC went really well and I’m excited to start classes tomorrow and begin this new chapter.
