  • I don’t add vegetables to the paniyaram batter for this recipe, but you can fold in finely chopped veggies if you like.
  • Use well-fermented idli or dosa batter for soft, airy paniyarams.
  • Warm the paniyaram pan and brush each cavity lightly with oil before adding batter.
  • Fill the pan cavities with batter, cover and cook on low heat for 3–5 minutes. Flip and cook until the paniyarams are crisp and golden.

For Tandoori Tikka Marinade

Yogurt

  • Use full-fat store-bought yogurt, Greek yogurt, or thick homemade curd. A thick yogurt helps the masala adhere to the paniyaram without dripping off.

Spices

  • The marinade uses common Indian spices: red chili powder, turmeric, coriander, cumin, chaat masala, and garam masala. I skip artificial food color; use Kashmiri chili powder if you want a naturally bright red hue.
  • Kasoori methi adds an aromatic, earthy note.
  • Fresh ginger and garlic bring depth of flavor.

Roasted besan (chickpea flour)

  • Roasted besan is important — it helps the yogurt-spice mix cling to the paniyaram. Roast besan on low heat until light brown and nutty, cool it, then store in an airtight container.

Choice of oil

  • Mustard oil gives the tikkas a restaurant-style flavor. If you don’t have it, a neutral cooking oil works fine.

Ingredients

  • 30 paniyarams
  • 2 medium red onions
  • 1 large bell pepper (green or red)

For the marinade

  • 2 tablespoons mustard oil
  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 3 tablespoons besan (roasted)
  • 1/2 cup thick yogurt
  • 1 teaspoon chaat masala
  • 2 teaspoons garam masala
  • 3 teaspoons red chili powder (Kashmiri if available)
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon coriander powder
  • 1 teaspoon kasoori methi
  • 1 teaspoon salt (adjust to taste)

Instructions

  • Roast besan until aromatic and light brown; set aside.
  • Cut peppers and onions into 1–1.5 inch pieces.
  • Warm mustard oil until hot, then switch off and let it cool slightly.

For marination

  • Combine all marinade ingredients in a large bowl and whisk well.
  • Taste the marinade: it should be concentrated, slightly strong on spices and salt, since it will mellow once coated.
  • Add cubed peppers, onions, and prepared paniyarams. Mix gently to coat everything evenly.
  • Cover and refrigerate for at least 2 hours, up to 2 days, to allow flavors to meld.

  • If using wooden skewers, soak them in water for at least 1 hour to prevent burning; metal skewers need no soaking.
  • Preheat the oven to 480°F (250°C).
  • Line a baking tray with foil and grease it with oil.
  • Thread paniyaram, onions, and peppers onto skewers, alternating pieces. Brush with melted butter or oil to keep them moist.
  • Bake for about 4 minutes, turn once, then bake another 4–5 minutes.
