Summer is here and that means enjoying fresh fruit, especially berries. Their bright, juicy flavor is exactly what you want in a light cocktail. We made this recipe recently, loved it, and I wrote it down so you can make it at home too.

What you need
- Strawberries – Use the ripest berries you can find for maximum flavor.
- Mint – A few sprigs plus extra for garnish. Chocolate mint works well if available.
- Lime juice – About 1 ounce (roughly one lime).
- Syrup – Agave is my preference, but simple syrup is a fine substitution.
- Rum – Gold or white rum both mix nicely in this drink; I used gold.

How to make it
Making strawberry mojitos is quick: extract the strawberry juice, gently muddle the mint, add the remaining ingredients and ice, shake until cold, then strain into glasses and top with soda water. Here are the clear steps:
- Mash and strain the strawberries. Press the chopped berries through a sieve to collect the juice. You can puree and strain if you prefer.
- Gently muddle the mint. A couple of light twists is enough to release aroma without bitterness.
- Add the rest (except the soda water) and shake. Combine strawberry juice, syrup, lime juice, rum and ice. Shake until well chilled.
- Pour and top with soda. Strain into tall glasses filled with ice, top with soda water, add a straw and garnish.

Ingredients
- 1/2 cup chopped strawberries
- 8–10 mint leaves
- 1 oz agave syrup (or simple syrup)
- 1 oz lime juice
- 3 oz rum (white or gold)
- 4 oz soda water
- Optional garnishes: lime slice, small strawberry, sprig of mint
Instructions
- Mash the strawberries and press them through a sieve into a bowl, extracting as much juice as possible.
- Combine the strawberry juice and mint leaves in a shaker and gently muddle the mint with a smooth-ended muddler (one or two twists).
- Add agave (or simple syrup), lime juice, rum, and ice to the shaker. Shake well until cold.
- Strain into two tall glasses filled with ice, top up with soda water, add a straw, and garnish as desired.
Notes
- Rum: White or gold rum both work well; choose based on your flavor preference.
- Strawberries: Frozen berries are fine—thaw and strain them the same way.
- Make ahead: You can prepare the strawberry-mint-rum base several hours ahead. Keep chilled and add soda water just before serving.
