- 2 tablespoons parsley stalks, finely chopped
- ½ cup (125 ml) dry white wine
- ½ teaspoon red chilli flakes
- 2 cups (500 ml) tomato passata or crushed tinned tomatoes
- 1 kg (2.2 lb) mussels, scrubbed and debearded
- ⅓ cup flat-leaf parsley, finely chopped (for serving)
- Crusty bread, for serving
Instructions
- Drain and rinse the mussels. Discard any with cracked shells. Scrub if necessary and remove the beard by pulling it toward the closed side of the shell.
- Heat olive oil in a large saucepan or deep frying pan over medium-high heat. Add sliced fennel, onion and sea salt and sauté 5–7 minutes until softened and lightly golden.
- Add garlic and parsley stalks and cook 1–2 minutes, taking care not to burn the garlic.
- Pour in the white wine and cook 2 minutes to reduce slightly.
- Add tomato passata and chilli flakes, simmer 5 minutes.
- Add mussels to the simmering sauce, stir to coat, cover and cook 1–2 minutes, shaking the pan gently.
- As mussels open, remove them with tongs to a plate, allowing excess sauce to drain back into the pan. Discard any that remain tightly closed if you prefer.
- Return all opened mussels to the sauce, sprinkle with chopped parsley and serve immediately with crusty bread.
