Slow-Cooked Spanish Yellow Rice Recipe for Authentic Flavor

This flavorful yellow rice is a family favorite and pairs beautifully with grilled chicken or any simple protein.

Spanish Style Yellow Rice (Slow Cooked)

Ingredients

  • 2 can 14oz chicken broth
  • 1 1/2 cups uncooked converted long grain rice
  • 1 small red bell pepper, diced
  • 1/3 cup water
  • 1/2 tsp saffron threads, crushed (or 1/2 tsp ground turmeric)
  • 1/2 tsp red pepper flakes
  • 1/2 cup frozen peas, thawed
  • salt to taste

Instructions

  • Place all ingredients except the peas into the slow cooker and stir to combine, ensuring the rice is evenly submerged.
  • Cook on low for about 4 hours, or until the liquid has been absorbed and the rice is tender.
  • Stir in the thawed peas, cover, and cook an additional 15–30 minutes until the peas are heated through. Taste and adjust salt or seasonings as needed.

Gluten Free: Use a gluten-free chicken broth to keep this recipe gluten free.
