Ingredients

  • SALAD INGREDIENTS:
  • 2 romaine lettuce hearts (use the hearts for a crisp, crunchy texture)
  • 3 Roma tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup medium-sized olives
  • 1 cup croutons
  • 1/4 cup Parmesan cheese, grated
  • DRESSING:
  • 1/2 cup mayonnaise
  • 1/3 cup white vinegar
  • 1 tsp canola oil
  • 2 tbsp corn syrup
  • 4 tbsp Parmesan cheese
  • 1 tsp minced garlic
  • 1/2 tsp Italian seasoning
  • 1/2 tsp dried parsley
  • 1 tbsp lemon juice

Instructions

1. Combine all dressing ingredients in a blender or small food processor and blend until smooth and well combined.
2. Chop the romaine, dice the tomatoes, and slice the red onion. Place in a large bowl and add olives, croutons, and Parmesan.
3. Pour the dressing over the salad, toss gently to coat, and serve immediately for the best texture and flavor.
