Ingredients

For the Cannellini Bean and Kale Stew

  • 2 cans cannellini beans (19 oz / 540 ml each), drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 2 shallots, minced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine or vegetable stock
  • 6 large kale leaves (about 3/4 lb / 340 g), washed, stemmed, and chopped
  • 2 cups vegetable stock
  • 1 tsp kosher salt or fine sea salt
  • Freshly ground black pepper, to taste
  • 1 oz grated Parmigiano Reggiano cheese (optional; see vegan note)
  • 1 lemon, scrubbed clean, zested and juiced

For the Gremolata

  • 1 cup loosely packed Italian parsley leaves
  • 1 lemon, scrubbed clean (zest used)
  • 1 clove garlic, peeled and coarsely chopped
  • 1/2 tsp fleur de sel or flaky sea salt

Instructions

  1. Prepare the beans: Drain and rinse one can of cannellini beans, transfer them to a bowl, and mash with a fork or potato masher until roughly pureed. This will thicken the stew. Rinse the second can and add those whole beans to the bowl; do not mash them. Set aside.
  2. In a large sauté pan or braiser set over medium heat, warm the olive oil. Add shallots and diced celery and cook until softened, about 3 minutes. Add garlic and cook until fragrant, about 1 minute.
  3. Pour in the white wine (or a splash of stock) and cook until reduced by most of the liquid, about 3 minutes. Add half the chopped kale and stir until it wilts and reduces in volume, about 3 minutes, then add the remaining kale and cook for another 3 minutes.
  4. Add both the mashed and whole cannellini beans, the vegetable stock, salt, and a few grinds of black pepper. Stir to combine, bring to a gentle simmer, then reduce the heat to low, partially cover the pot, and cook for 10 minutes to allow flavors to meld.
  5. Stir in the grated Parmigiano Reggiano (if using), lemon zest, and lemon juice. Taste and adjust the seasoning with more salt or pepper as needed.
  6. Make the gremolata: On a cutting board, coarsely chop the parsley. Zest the lemon over the parsley, add the chopped garlic, sprinkle with salt, and continue chopping until the parsley, garlic, and lemon zest form a finely textured mix. Transfer the gremolata to a small bowl.
  7. Serve: Divide the stew among bowls and generously sprinkle each portion with gremolata. Serve immediately with crusty bread for soaking up the broth.
  8. Storage: The stew reheats well. Store in an airtight container for up to 3 days; the gremolata can be kept separately for the same period. Note that the kale may darken slightly after refrigeration.
  9. Make it vegan & dairy-free: Replace the Parmigiano Reggiano with 1/4 cup (60 ml) nutritional yeast for a savory, dairy-free option.

Tips

Mashing half the beans gives the stew a creamy, velvety texture without adding cream. If you prefer a thinner broth, add a little more vegetable stock. For extra depth, finish with a splash of good olive oil right before serving.
