Ingredients

- Chicken Thighs – Skin-on, bone-in thighs give the juiciest results and crisp up nicely. You can use boned thigh fillets or chicken breasts, but reduce cooking time (start with 20 minutes, then check and cook for a further ~15 minutes if needed).
- Baby Potatoes – Charlotte or other baby potatoes work well. If using larger potatoes, cut into quarters or large chunks so they roast evenly.
- Plum Tomatoes – Plum or vine tomatoes are ideal. Cherry tomatoes can also be used.
- Kalamata Olives – Kalamata olives add an authentic Greek note. Pitted jarred olives are convenient.
- Red Onion – Optional, but it adds colour and sweetness when roasted.
- Feta Cheese – Crumble over before serving. Use a dairy-free feta alternative if you need the dish to be dairy free.

Greek Chicken Traybake
A one-pan dish of chicken with potatoes, tomatoes, onion and olives, finished with crumbled feta and a zesty marinade.
Ingredients
- 4 chicken thighs (skin on, bone in)
- 500g Charlotte or baby potatoes
- 2 small red onions, quartered
- 325g plum tomatoes
- 100g Kalamata olives
- 100g feta cheese (or dairy-free alternative)
For the marinade:
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp smoked paprika
- 1 tbsp dried oregano
- 2 tsp chopped garlic
- Pinch of salt
Instructions
- Preheat the oven to 200°C (Fan 180°C / Gas Mark 6). In a bowl, combine the olive oil, lemon juice, paprika, oregano, garlic and a pinch of salt to make the marinade.
- Place the chicken thighs, potatoes and onion chunks in a large baking dish in a single layer with some space between pieces. Pour the marinade evenly over the ingredients.
- Roast in the hot oven for 30 minutes. Remove the tray, add the tomatoes and olives, toss gently so everything is coated, then return to the oven for about 15 more minutes, until the chicken is cooked through and the potatoes are tender.
- Scatter crumbled feta over the tray just before serving. Serve hot with a dollop of tzatziki or a simple salad.
