Ingredients

  • 8 oz 8 Salmon Fillet

  • 1 Head 1 Cauliflower

  • 2 Cloves of Garlic

  • 3 Tbsp 3 Grass Fed Butter

  • 1/2 tsp 1/2 Oregano

  • 1/2 tsp 1/2 Rosemary

  • 1/2 tsp 1/2 Thyme

  • Pinch of Salt & Pepper

Directions

  • Preheat the oven to 400°F (200°C).
  • Place the salmon in a shallow dish. Mix 1 tablespoon melted butter with the minced garlic and herbs, then brush the mixture over the fillet and season with salt and pepper.
  • Rinse and roughly chop the cauliflower head. Steam the cauliflower until tender and easily pierced with a fork.
  • Bake the salmon in the preheated oven for about 12 minutes, until it flakes easily with a fork.
  • When the cauliflower is cooked, transfer it to a food processor with 2 tablespoons of butter and a pinch of salt and pepper. Blend until smooth and creamy — you can also mash by hand for a coarser texture.
  • Plate the salmon immediately with a generous scoop of mashed cauliflower and serve hot.

I recently made this Garlic Butter Salmon & Mashed Cauliflower and it exceeded expectations. The garlic-herb butter gives the salmon a rich, savory crust while the cauliflower mash delivers a silky, low-carb alternative to mashed potatoes.

To prepare the dish, melt butter and combine it with minced garlic and the dried herbs to create a fragrant garlic butter. Season the salmon with salt and pepper, then coat it evenly with the garlic butter before baking.

While the fish bakes, steam the cauliflower until very tender. Transfer the cooked cauliflower to a food processor with butter and a pinch of salt and pepper, then blend until smooth. For a lighter texture, add a splash of cream or a little extra butter if desired; for a chunkier mash, use a potato masher instead.

Serve the salmon hot with a generous scoop of mashed cauliflower. The balance of bright garlic, warm herbs and buttery cauliflower creates a comforting and elegant plate that’s both nutritious and keto-friendly.

This recipe is ideal when you want a quick, healthy dinner: it’s high in protein and healthy fats from the salmon and keeps carbs low with cauliflower as the creamy side. It’s simple to prepare, versatile, and satisfying for anyone following a low-carb or keto lifestyle.
