Ingredients

  • Homemade or store-bought pizza dough
  • 2 Tablespoons olive oil
  • 1 cup diced chicken breast (about 1.5–2 breasts)

PEANUT SAUCE

  • ½ cup softened creamy peanut butter
  • ½ cup hoisin sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon rice wine vinegar
  • 2 Tablespoons water
  • 1 Tablespoon honey
  • 1 Tablespoon minced ginger
  • 2 garlic cloves, minced
  • 1 Tablespoon sesame oil

PIZZA TOPPINGS

  • ½ cup julienned carrots
  • ½ cup julienned or finely diced red onions
  • ½ cup bean sprouts
  • 2 Tablespoons chopped cilantro or parsley
  • 2 Tablespoons dry roasted peanuts
  • 1 Tablespoon chopped green onions

Instructions

  1. Preheat oven to 450°F.
  2. Make the peanut sauce: In a small or medium pot over medium heat, combine the peanut butter, hoisin, soy sauce, rice wine vinegar, honey, ginger, garlic, sesame oil and water. Whisk slowly to combine and bring to a brief boil. Let boil about 30 seconds, whisking until smooth, then remove from heat.
  3. Divide the sauce into two equal portions: one for the chicken and one for the pizza.
  4. Heat olive oil in a large non-stick skillet over medium-high heat. Add the diced chicken and cook 5–7 minutes until cooked through. Turn off the heat and toss the chicken with half of the peanut sauce to coat. Set aside.
  5. Place the prepared pizza dough on a pizza pan. Brush olive oil around the crust edges with a pastry brush.
  6. Spread the remaining peanut sauce evenly over the dough. Top with the peanut-coated chicken (if using), carrots, red onion, bean sprouts, cilantro, peanuts, and green onions.
