What is Frito Pie

Despite the name, Frito Pie isn’t a pie in the traditional sense. It’s essentially a casserole or skillet bake. The dish is commonly credited to Teresa Hernandez of Santa Fe in the early 1960s, who reportedly served chili directly in a bag of Fritos and topped it with cheese. Since then, versions have evolved across kitchens and regions; some layer chips into the casserole before baking, while others add chips only when serving to preserve their crunch.

This version keeps the chips on top at serving time to avoid sogginess and focuses on a robust, flavorful beef and bean filling with melted cheese baked until bubbly.

Can this be made ahead?

Yes. Prepare the filling and refrigerate up to 2 days before baking; keep the Fritos off until serving. You can also freeze the prepared filling for up to 2 months — thaw overnight in the refrigerator before baking.

The ingredient list is straightforward and widely available. The filling uses ground beef, diced onion, bell peppers, minced garlic, a mix of seasonings, fire-roasted diced tomatoes, and chili beans. Optional diced jalapeños or canned chilies add heat. If you prefer, substitute a packet of taco or chili seasoning for convenience.

For cheese, use what you like — a blend of sharp cheddar and pepper jack works well for both flavor and melt. Adjust the amount to suit your family’s taste.

How to make Frito Pie:

Begin by preheating the oven to 400°F. In an oven-safe skillet over medium heat, brown 1 pound of ground beef with diced onion, red and green bell pepper, and 3–4 cloves of minced garlic. Drain any excess grease if desired.

Stir in the seasonings, then add a can of fire-roasted diced tomatoes, a 15 oz can of chili beans, and a 4 oz can of diced jalapeños or chilies. Mix thoroughly to combine flavors.

Top the mixture with shredded cheese (about 8 oz sharp cheddar and 8 oz pepper jack, or your preferred blend). Bake in the 400°F oven for 15–20 minutes, until the cheese is melted, golden and bubbly. Remove from the oven and add Fritos just before serving so they stay crisp. Finish with sour cream, sliced jalapeños, hot sauce, or other toppings you enjoy.

Ingredients

  

  • 1 lb Ground Beef
  • 1/2 each Red and Green Bell Pepper, diced
  • 1 Yellow Onion, Diced
  • 3-4 Garlic Cloves, minced
  • 15 oz Can of Chili Beans
  • 14.5 oz Can of Fire Roasted Diced Tomatoes
  • 4 oz Can of Diced Jalapeños or Chilies
  • 8 oz Sharp Cheddar, grated
  • 8 oz Pepper Jack, grated
  • 1 bag Any Flavor of Fritos Corn Chips

Seasonings

  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tbs Chili Powder
  • 1 tbs Salt
  • 1 tbs Black pepper
  • 1 tbs Cumin
  • 1 packet Sazon Seasoning Mix
  • 1 tbs Slap Ya Mama or any Cajun seasoning optional

Instructions

 

  • Preheat oven to 400 degrees F.
  • In an oven-safe skillet over medium heat, brown the ground beef with the onion, bell peppers and garlic. Drain grease if preferred.
  • Add the seasonings, then stir in the diced tomatoes, chili beans and diced jalapeños. Mix well to combine.
  • Top with shredded cheese and bake for 15–20 minutes until cheese is golden and bubbly. Remove from oven, top with Fritos and any additional toppings, then serve.

Notes

If you don’t have an oven-safe skillet, transfer the cooked mixture to a baking dish before adding cheese.

To serve as walking tacos, keep Fritos in individual bags and spoon the filling on top.

You can omit the Fritos and serve the filling over rice or alongside cornbread for a different presentation.
