Delicious chocolate-drizzled pecan pie bites baked in mini phyllo cups. The perfect bite-sized dessert after a hearty Thanksgiving meal.

Confession: I’m not a huge fan of traditional pecan pie — it can be overly sweet and gooey. These pecan pie bites, however, are a different story. Small, perfectly portioned, and not too sweet, they let the pecans shine without being buried under a thick sugary layer. Bite-size desserts always seem to taste better, and these deliver the right balance of crunch and sweetness.
I’m slightly obsessed with mini phyllo cups. They add a light, crispy texture that a standard pie crust simply can’t match. A drizzle of melted chocolate finishes each bite, making them an irresistible little treat. Anything with chocolate drizzle is instantly better, right?
Today also marks the close of Pie Week — it’s been a delightful stretch of recipes and inspiration. While Pie Week is over for now, there are plenty more tasty ideas coming soon.

Chocolate Drizzled Pecan Pie Bites
Sweet, crunchy pecan pie bites made in mini phyllo cups and finished with a chocolate drizzle — ideal for sharing after Thanksgiving dinner or any festive gathering.
Yield: 15 pie bites
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Ingredients:
3/4 cup chopped toasted pecans
3 tablespoons dark brown sugar
3 tablespoons golden syrup (or dark corn syrup)
1 egg
2 teaspoons melted butter
1/4 teaspoon vanilla paste
Pinch of kosher salt
1 package (15 count) mini phyllo shells
1/2 cup melted semi-sweet chocolate
Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a small bowl, combine the chopped pecans, dark brown sugar, golden syrup, and egg. Stir until evenly mixed.
Add the melted butter, vanilla paste, and a pinch of kosher salt. Mix until fully incorporated.
Arrange the mini phyllo shells on the prepared baking sheet. Spoon approximately 2 teaspoons of the pecan filling into each shell.
Bake for about 20 minutes, or until the filling is set and slightly bubbly.
Remove from the oven and allow the bites to cool slightly. Drizzle melted semi-sweet chocolate over each pie bite and let the chocolate set before serving.
