No-Bake S’mores Cookies: Campfire Flavor in Minutes

S'mores No-Bake Cookies

Happy National S’mores Day! If you love the classic campfire treat, you’ll enjoy this easy, no-bake twist that keeps all the familiar flavors—graham, chocolate, and marshmallow—without the fire or fuss. These S’mores No-Bake Cookies are quick to make, portable, and perfect for parties, school snacks, or a simple dessert at home.

Rather than using traditional graham crackers, this version uses Golden Grahams cereal for a nostalgic crunch that holds up well mixed with melted marshmallows. Milk chocolate chips add a creamy, familiar s’mores flavor, and since the cookies are no-bake, they come together in about ten minutes. I made mine into small clusters and finished a few with a light chocolate drizzle for a pretty touch, but you can shape them into bars or truffles if you prefer.

These cookies are great for celebrating National S’mores Day, or whenever you want an easy, crowd-pleasing treat. They store well in an airtight container, making them a convenient make-ahead dessert.

These delicious s’mores cookies combine Golden Grahams, milk chocolate chips, and mini marshmallows for an easy no-bake treat that’s perfect for celebrating National S’mores Day or any time you crave campfire flavor.

Ingredients

  • 1/4 cup butter
  • 1 (10.5 oz) bag mini marshmallows
  • 1 (11.5 oz) bag milk chocolate chips (plus an optional 1 cup for drizzling)
  • 8 cups Golden Grahams cereal

Instructions

  1. In a medium stockpot over medium heat, melt the butter. Once melted, add the mini marshmallows and stir frequently until they are fully melted and smooth. Remove the pot from the heat.
  2. Stir in the Golden Grahams cereal until the cereal is evenly coated with the marshmallow mixture. Add the milk chocolate chips and fold them in until evenly distributed. If you prefer the chips to remain more solid, use chilled or frozen chips so they melt less when mixed in.
  3. Using a spoon (or a small cookie scoop), form the mixture into small clumps and place them on wax or parchment paper. Allow the clusters to cool and firm up for several minutes.
  4. If you want a chocolate drizzle, melt additional chocolate chips in a double boiler or carefully in short bursts in the microwave, stirring in between. If the melted chocolate is too thick, add a teaspoon or two of vegetable oil or shortening to thin it. Transfer the melted chocolate to a small piping bag or a resealable plastic bag with a tiny corner snipped off, then lightly drizzle over the cooled cookies.
  5. Store finished cookies in an airtight container at room temperature for up to two weeks. They make a sweet snack for several days and are easy to pack for parties or school lunches.

More s'mores fun

For another playful s’mores idea, try making s’mores pops — a fun, portable way to enjoy the same flavors with a festive presentation. If you enjoy experimenting, consider swapping in dark chocolate chips for a richer contrast, mixing in a handful of chopped nuts for texture, or using mini butterscotch or peanut butter chips for a creative twist.
