Tandoori Paniyaram Tikka
Ingredients
- 30 paniyarams
- 2 medium red onions
- 1 large bell pepper (green or red)
For the marinade
- 2 tablespoons mustard oil
- 2 teaspoons minced garlic
- 2 teaspoons grated ginger
- 3 tablespoons besan (roasted)
- 1/2 cup thick yogurt
- 1 teaspoon chaat masala
- 2 teaspoons garam masala
- 3 teaspoons red chili powder (Kashmiri if available)
- 1 teaspoon cumin powder
- 1/2 teaspoon turmeric
- 1 teaspoon coriander powder
- 1 teaspoon kasoori methi
- 1 teaspoon salt (adjust to taste)
Instructions
- Roast besan until aromatic and light brown; set aside.
- Cut peppers and onions into 1–1.5 inch pieces.
- Warm mustard oil until hot, then switch off and let it cool slightly.
For marination
- Combine all marinade ingredients in a large bowl and whisk well.
- Taste the marinade: it should be concentrated, slightly strong on spices and salt, since it will mellow once coated.
- Add cubed peppers, onions, and prepared paniyarams. Mix gently to coat everything evenly.
- Cover and refrigerate for at least 2 hours, up to 2 days, to allow flavors to meld.
