Tips for Making This Recipe

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ⅓ cup vegetable oil
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • ½ cup whole milk
  • ½ cup full-fat sour cream
  • 1 cup mashed overripe banana (about 2 large bananas)
  • ½ cup dulce de leche (homemade or store-bought)
  • Sparkling sugar for sprinkling on top (optional)

Instructions

  1. Preheat oven to 425°F. Line a 12-cup muffin tin with paper liners or spray with nonstick spray.
  2. Whisk together the flour, baking powder, salt, and cinnamon in a large bowl. Set aside.
  3. In a separate large bowl, stir together the vegetable oil, brown sugar, eggs, milk, and sour cream until combined.
  4. Add the mashed banana and mix until incorporated.
  5. Gently fold the dry ingredients into the wet mixture until no dry streaks remain.
  6. Fill each muffin cup about ¼ full with batter. Add a teaspoon of dulce de leche on top and swirl gently with a toothpick.

  10. Cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.
