Gluten-Free S’mores Chocolate Chip Cookies Recipe

How to Make S’mores Chocolate Chip Cookies

STEP 1: Whisk together the gluten free flour blend, graham cracker crumbs, baking soda and salt in a small bowl and set aside.

STEP 2: In the bowl of an electric mixer, beat butter, sugar and brown sugar on medium until light and fluffy, about 3 minutes.

Vanilla extract, egg and egg yolk added to the creamed butter and sugar in a metal mixing bowl.

STEP 3: Add vanilla, the egg and the extra egg yolk. Beat another 60 seconds until combined.

STEP 4: With the mixer on low, gradually add the dry ingredients and mix just until incorporated.

STEP 5: Fold in the chocolate chips so they are evenly distributed through the dough.

STEP 6: Scoop about 1/4 cup of dough. Press an indentation into the center and add 5–6 mini marshmallows like a little nest.

STEP 7: Enclose the marshmallows by shaping the dough around them. A little marshmallow peeking out is fine and creates a lovely puddle on top when baked.

STEP 8: Place dough balls on a parchment-lined baking sheet about 3 inches apart, flatten slightly, and bake. The cookies will spread while baking.

Storage

Store leftover cookies in an airtight container at room temperature for up to 4 days. These cookies do not freeze well due to the marshmallow center.

  • 1 1/4 Cup Gluten Free 1-to-1 Flour Blend
  • 1 Cup Gluten Free Graham Cracker Crumbs
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 Cup Vegan Butter, room temperature
  • 1/2 Cup Sugar
  • 1/2 Cup Light Brown Sugar
  • 1 Egg
  • 1 Egg Yolk
  • 1 teaspoon Vanilla
  • 1 Cup Allergen Free Chocolate Chips (or roughly chopped chocolate)
  • 1/2 Cup Mini Marshmallows, frozen

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together graham cracker crumbs, gluten free flour blend, baking soda and salt.
  3. In a mixer, combine butter, sugar and brown sugar. Beat on medium for 3 minutes until light and fluffy. Scrape down the bowl.
  4. Add the egg, egg yolk and vanilla. Beat for an additional 60 seconds and scrape the bowl again.
  5. With the mixer on low, gradually add the dry mixture and stir until just combined. Fold in the chocolate chips.
  6. Scoop 1/4 cup portions of dough. Press an indentation into each and add 5–6 mini marshmallows. Wrap the dough around the marshmallows to enclose them.
  7. Place dough balls on the prepared baking sheets about 3 inches apart and flatten slightly. Bake 12–13 minutes, until edges are set. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Marshmallows: Using frozen marshmallows helps prevent leaking during baking.
