Ingredients
- 1 Cup Organic unsweetened coconut milk
- 1 cup unsweetened almond milk
- 2 tablespoon raw unsweetened coconut buttermelted or softened
- 2 ½ tablespoon unsweetened cocoa or cacao powder
- 1 ½ tablespoon unsweetened coconut flakes
- 2 tablespoon chocolate chipsmelted (Enjoy Life brand is a good paleo option). For low carb use unsweetened baking chocolate (about 14 g) melted.
- ½ teaspoon almond extractor coconut extract; use an organic, gluten-free variety
- tablespoon sweetener of choiceabout 2½ tbsp to taste. Use honey for paleo; for low carb use 3 tbsp erythritol or liquid stevia (adjust to taste).
Instructions
- Put all ingredients in a blender and blend until smooth. Taste and adjust sweetness if needed.
- Pour the mixture into popsicle molds and freeze for at least 5 hours or until solid.
- For best flavor, let them sit overnight so the flavors can intensify.
- Remove from molds, serve, and enjoy.
