This summer I made a point of giving blueberries another chance. As a child I often avoided them after a few bouts of stomach trouble, so they never became a favorite. A few years ago, a neighbor offered me a slice of her triple-berry pie and, to my surprise, I handled it fine. That small moment nudged me toward experimenting with blueberries again.
I’ve already shared a couple of blueberry recipes recently, but these Honey Blueberry Oatmeal Bars quickly became my favorite. What sets them apart is a simple element: homemade blueberry jam. The jam is cooked without pectin, made from fresh blueberries, a touch of sweetener, and lemon juice, then simmered until it thickens naturally in about 10–15 minutes.
The bars themselves are soft and oat-forward, with warm spice and just the right amount of sweetness from honey and the jam. The honey plays an important role here — it lends a floral, nuanced sweetness that allows you to use less added sugar while keeping the texture moist for days. That moisture retention means the bars stay tender even if you don’t serve them immediately.
These bars bring to mind classic oatmeal raisin cookies: comforting, slightly chewy, and with a lightly spiced base. Spread half the oat dough in the pan, layer with cooled blueberry jam, and finish with the remaining dough for a jammy, satisfying middle.
If you don’t have blueberries on hand, the same method works well with other fruits. Peach, strawberry, or sour cherry jams cooked without pectin can be used in their place for a different flavor profile. Because the jam is used fresh and cooled rather than canned, you don’t need to worry about pectin or long-term preservation.

These bars travel well, too. I brought a pan to a coworking space two days after baking and they disappeared by lunchtime. Leftover blueberries from the jam batch can be repurposed in muffins or a small coffee cake for more variety.

Ingredients
- 1 recipe Small Batch Blueberry Jam (cool completely before using)
- 1 1/2 cups all-purpose flour
- 1 1/4 cups old-fashioned oats
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup (6 ounces or 12 tablespoons) unsalted butter, softened
- 1/2 cup honey
- 2 tablespoons brown sugar
- 1 egg, room temperature
- 1 teaspoon vanilla extract
Instructions
- Make the Small Batch Blueberry Jam and cool completely before using.
- Preheat oven to 350°F. Line an 8×8-inch square pan with parchment or grease with cooking spray.
- In a large bowl, whisk together the flour, oats, cinnamon, baking soda, and salt.
- In another bowl, beat the butter, honey, and brown sugar until creamy, about 2–3 minutes.
- Beat in the egg and vanilla until incorporated; the mixture may look slightly curdled.
- Gradually mix in the flour and oat mixture until combined.
- Press half of the dough evenly into the bottom of the prepared pan. Spread the cooled blueberry jam over the dough. Crumble or press the remaining dough on top.
- Bake 28–30 minutes, until golden brown. Cool completely before cutting into squares.
