A quick and simple Korean mushroom side dish ready in under 10 minutes. Shiitake mushrooms are stir-fried with sesame oil and garlic — excellent with steamed rice, bibimbap, or kimbap.

This Korean shiitake mushroom side dish is one of the easiest and fastest banchan (Korean side dishes) to make. It pairs perfectly with a bowl of freshly steamed rice.
While you can use many mushroom varieties, shiitake are ideal for this recipe because of their rich, earthy flavor and firm, meaty texture. They bring a satisfying umami that works well for vegetarian and vegan meals.

In Korean this stir-fried mushroom dish is called beosut bokkeum — beosut meaning mushroom and bokkeum meaning stir-fried. Many Korean banchan are intentionally simple and fast, and this dish is a great example: just five ingredients and about ten minutes from start to finish.

This is an excellent vegan side dish thanks to the shiitake’s hearty mouthfeel and pronounced umami. It complements rice, noodles, and many Korean-style bowls.
How to Make Korean Mushroom Side Dish
Preheat a pan over medium-high heat so it’s hot before you add the mushrooms. Thinly slice the shiitake and prepare your scallion and garlic.
Add the sliced mushrooms to the hot pan with sesame oil, scallions, and minced garlic. Sauté for 3–4 minutes until the mushrooms soften and release some liquid. Turn off the heat, then season with salt and pepper to taste. Serve immediately with steamed rice.
Serving Suggestions:
- Serve alongside a bowl of steamed rice
- Add as a topping to bibimbap
- Use as a filling in kimbap
- Add to buddha bowls or Korean-style rice bowls
- Use as a garnish for Asian noodle soups or noodle bowls
Storage:
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
