How to Make Weight Watchers Toasted Almond Cranberry Bark – 6 Easy Steps
This quick recipe takes minimal hands-on time; most of the work is done in the freezer. Updated March 2023 for WW points.

STEP ONE: TOAST ALMONDS
Toast the sliced almonds in a cast-iron or regular skillet over low heat until they are lightly golden. Watch them closely so they don’t burn. Remove from heat and let cool.
STEP TWO: MIX BARK FILLING
In a mixing bowl, combine the Greek yogurt, granulated stevia, almond extract and vanilla extract. Whisk until smooth and well blended.

STEP THREE: ADD TO PAN
Line an 8 x 8-inch baking pan with parchment paper. Spread the yogurt mixture into the pan in an even layer.
STEP FOUR: ADD TOPPINGS
Evenly sprinkle the toasted almonds and dried cranberries over the yogurt and press lightly so they stick.
STEP FIVE: ADD CHOCOLATE
Melt the chocolate in the microwave in 15-second intervals, stirring between each. Place melted chocolate in a piping bag or zip-top bag and snip a small corner, then drizzle over the yogurt. Alternatively, dip a knife into the chocolate and drizzle it across the top.

STEP SIX: FREEZE
Freeze the pan for 2 to 4 hours, until firm. When frozen, remove it from the freezer and let it sit at room temperature for about 5 minutes. Use a sharp knife to cut the bark into 25 even pieces (five rows by five columns works well).
