
I recently hosted a fiesta and set up an aguas frescas bar. After the party I had some leftover aguas frescas, so I turned them into refreshing paletas — simple, cooling popsicles perfect for a hot day.
I’m loving my stainless steel popsicle mold, though it’s not required to make paletas. Disposable plastic or paper cups with wooden sticks work just fine — remember the little Dixie cups? They’re perfect for this. If you’re not using a mold, freeze the liquid without the sticks for about 30 minutes, then insert the sticks so they stay upright as the paletas finish freezing.
Fruity cantaloupe agua and a floral, slightly spicy hibiscus (jamaica) agua with cinnamon make delicious, traditional Mexican paletas. One taste will cool you down and bring back beach-day memories.

Ingredients
- 1 x Cantaloupe Agua Fresca, Agua Fresca de Melón
- 1 x Hibiscus-Cinnamon Agua, Agua de Jamaica con Canela

Fill popsicle molds or cups with the prepared agua fresca.

Freeze for at least 4 hours or overnight until fully set. If using disposable cups, freeze without sticks for about 30 minutes, then insert sticks and finish freezing so they stay centered.

- To unmold, briefly run the molds under warm water for a few seconds to loosen the paletas.
