Spanish Style Yellow Rice (Slow Cooked)

Ingredients
- 2 can 14oz chicken broth
- 1 1/2 cups uncooked converted long grain rice
- 1 small red bell pepper, diced
- 1/3 cup water
- 1/2 tsp saffron threads, crushed (or 1/2 tsp ground turmeric)
- 1/2 tsp red pepper flakes
- 1/2 cup frozen peas, thawed
- salt to taste
Instructions

Place all ingredients except the peas into the slow cooker and stir to combine, ensuring the rice is evenly submerged.

Cook on low for about 4 hours, or until the liquid has been absorbed and the rice is tender.

Stir in the thawed peas, cover, and cook an additional 15–30 minutes until the peas are heated through. Taste and adjust salt or seasonings as needed.
