In this easy recipe, liquid smoke stands in for the ti leaves to impart that signature smokiness, while a simple seasoning of salt lets the pork shine.

How to make Instant Pot Kalua Pork
The Instant Pot method is faster but adds a quick prep step. Cut a 4-pound pork shoulder roast into about six large chunks. Place the pieces in the Instant Pot, pierce the meat with a fork, pour the liquid smoke over the pork, and sprinkle with sea salt.
Secure the lid, set the valve to sealing, and cook on high pressure for 60 minutes. It will take roughly 20 minutes to come to pressure. Allow a natural pressure release for 25 minutes to preserve tenderness, then release any remaining pressure and open the lid. Remove the pork and shred it, discarding large pieces of fat. There will be flavorful juices left in the pot—ladle a bit over the shredded pork when serving.

How to make Slow Cooker (Crock-Pot) Kalua Pork
The slow cooker is the easiest method and ideal for a no-fuss day: place the whole roast in the slow cooker, pierce it with a fork, pour the liquid smoke over the top, and sprinkle with sea salt. Can I use a larger roast?

For the Cabbage:
- 1 head cabbage, chopped
- 2 tablespoons butter
- 1 1/2 teaspoons kosher salt
- Fresh cracked pepper, to taste
Instructions
Instant Pot Kalua Pork:
- Cut the pork into about six large chunks. Place them in the Instant Pot and poke the meat all over with a fork. Pour the liquid smoke over the pork and sprinkle with salt. Cover, set the valve to seal, and cook on high pressure for 60 minutes. Allow a 25-minute natural release, then release any remaining pressure and open.
- Remove the pork and shred in a large bowl, trimming away large pieces of fat. Ladle desired amount of the cooking juices over the shredded pork and serve with cooked cabbage and white rice.
Slow Cooker Kalua Pork:
- Place the whole roast in the slow cooker and poke all over with a fork. Pour liquid smoke over the top and sprinkle with salt. Cover and cook on low for 10–12 hours.
- Remove the pork and shred in a large bowl, trimming large pieces of fat. Ladle desired amount of the leftover juices over the pork and serve with cooked cabbage and white rice.
For the Cabbage:
- Melt butter in a large non-stick skillet. Stir in the chopped cabbage and cook 10–15 minutes, stirring occasionally, until tender. Season with kosher salt and fresh cracked pepper to taste. Serve alongside the Kalua Pork and rice.

Notes
