This Valentine’s Day Lemonade Spritz is the perfect mocktail for two! Made with brown sugar simple syrup and red currants, it’s sweet, a little tart, and festively pink. And because it’s made without alcohol, it’s also fun for kids!


In 2025 I worked on several sparkling-water collaborations developing mocktails. Before that, I didn’t pay much attention to mocktails—until I realized how creative and delicious they can be. Served in a pretty glass, a well-made mocktail feels special without the hangover. This Valentine’s Day Lemonade Spritz is an easy, pretty drink you can make for two, for a date night, or to include the whole family in the celebration.

The recipe started with gorgeous red currants I found at Whole Foods. They add a bright, tart flavor and a lovely rosy hue that feels romantic. If red currants aren’t available where you are, the notes below suggest good substitutes so you can still enjoy this festive lemonade spritz.

Valentine’s Day Lemonade Spritz

A sweet-tart mocktail with brown sugar simple syrup and red currants—pretty, refreshing, and alcohol-free so everyone can enjoy it.

Ingredients

Brown Sugar Simple Syrup

  • 1/4 Cup Water
  • 1/3 Cup Brown Sugar

Valentine’s Day Lemonade Spritz

  • 1/3 Cup Red Currants see notes
  • 1 oz Brown Sugar Simple Syrup see notes
  • 3/4 Cup Lemonade see notes
  • A Squeeze of Fresh Lemon Juice optional, but it MUST be fresh
  • Lemon Sparkling Water or Seltzer to top

Instructions

  • Make the brown sugar simple syrup: combine brown sugar and water in a small saucepan and bring to a gentle simmer, stirring often. Once simmering, remove from heat and stir until the sugar dissolves. Pour into a heat-safe container to cool.
  • Prep the currants: wash, dry, and remove them from their stems. Add the currants to a cocktail shaker and muddle with a muddler or a sturdy spoon until they release their juices.
  • Add the cooled brown sugar simple syrup and lemonade to the shaker. If desired, add a squeeze of fresh lemon juice. Add ice and shake until the shaker is very cold, about 30 seconds.
  • Strain the lemonade mixture evenly into two glasses. Top each with lemon sparkling water to your taste and garnish with extra currants.
  • Enjoy!

Notes

  • If you can’t find red currants, raspberries work as a substitute. Raspberries are less tart, so reduce the simple syrup to about 1/2 oz if using them.
  • Use homemade lemonade or a high-quality store-bought lemonade. If the lemonade tastes too sweet or lacks brightness, add a squeeze of fresh lemon juice to the shaker to balance the flavors.
  • Measurements: a cocktail jigger is handy, but if you don’t have one, 1/2 oz is approximately 1 tablespoon and 1 oz is approximately 2 tablespoons.
